More cookies!

I’m finally done making cookie dough for now. I finished the biscochitos, along with gluten-free chocolate chip and gluten-free oatmeal raisin dough. It feels good to have everything prepped and ready. Now it’s time to start baking, but not before taking a much-needed lunch break. I’m standing here trying to decide what I’m in the mood to eat, which somehow feels harder than making all the dough. Later this afternoon, I’ll also need to start preparing the spaghetti sauce for dinner tonight.

I baked a batch of chocolate chip cookies, and now I’m working on the gluten-free chocolate chip cookies. I’ve pretty much been in the kitchen all day, moving from one thing to the next, but I’m actually feeling good, especially since my back isn’t hurting, which is a huge relief. I’m taking a short breather before heading back into the kitchen; I’ve got about five minutes before the oven timer goes off. On top of all the baking, I also made spaghetti sauce for dinner tonight. In about an hour, I’ll need to get the water boiling.

The kids went to the mall today to do some Christmas shopping. It’s one of those rare moments where the house is actually quiet, and I’m enjoying the calm while it lasts. Lol
