Happy St. Patrick’s Day!

I’ve been officially summoned to make soda bread today, and I couldn’t be happier about it. Any excuse to bake is a good one. I’m thinking of making two loaves since bread seems to disappear around here like it has somewhere better to be.

I also want to try using that Dutch oven, the “fancy bread pot,” as I like to call it, because it feels like the kind of thing that will make me look like I really know what I’m doing.

Alright, I’m off to make bread. If all goes well, I’ll return smelling like a bakery.

The first loaf of bread is done; it looks good. The second one is in the oven now, and I’m hovering somewhere between hopeful and mildly suspicious. The dough wasn’t as firm as I wanted, so we’ll see if it behaves or decides to develop a personality of its own in there.

Somewhere in between all of this, I’ve also been reading my cybersecurity book and doing the quiz… which, technically, is not a Tuesday activity. That’s a Thursday task. Today is supposed to be “take notes and read a chapter.” Which I already did yesterday. Now I’ve accidentally skipped ahead in my own curriculum, like an overachiever who immediately regrets it. I should probably stick to the plan… but also, momentum is momentum, right?

Now I’m thinking about Tommy’s lunches for tomorrow and Thursday. Future-me would be very grateful if I just got that done now instead of pretending I’ll magically feel more motivated later. So I guess this is me gently nudging myself off to the kitchen again.

The second loaf is done. It looks good, just a bit smaller than the first; it didn’t rise quite as much. I’m sure it’ll still taste great, though. I just wish I hadn’t rushed it while making it. Baking can’t be rushed. I’m learning that.

I can already smell dinner, and it smells good. Since it’s St. Patrick’s Day, we’re having corned beef and cabbage, and I added potatoes and carrots to make it a full, cozy meal. Kel picked up some carrots this morning, so those went straight into the crockpot. I used two crockpots since one wasn’t going to hold everything. I even used our largest one, but no, I had to use two. Between that and the soda bread I baked earlier, I’m excited for dinner.

Everything should be ready around 5. No one will be home yet, but it will all be done and waiting when they get home.

Now I’m going to switch gears and make Tommy’s lunch for work tomorrow and Thursday. I don’t want to wait till tonight to make the lunches.
